CHARACTERISTICS
During the first few years, this wine has a nice red colour with a purplish shimmer. With time, it evolves, acquiring tile-red nuances.
On the nose, we find red berries and cherries, pepper, smoky and undergrowth smells. Those flavours evolve towards very ripe fruits, cocoa and leather.
In the mouth, there is a pronounced roundness, with very noticeable tannins in the young wines, and the alcohol gives a pleasant warmth sensation. This wine, typical of our region, is enjoyable young for its freshness, but demands several years of ageing to reach its full expression.
WINE AND FOOD
Special features of that wine are the following :
- red berries aromas (syrah, grenache), liquorice and cocoa ( syrah, mourvèdre) ;
- structure (syrah, mourvèdre) ;
- warm alcohol and roundness ( grenache).
Then we can imagine good “matches” with courses prepared with tasty red meats (lamb, duck, goose, beef, game..), vegetables like sweet peppers, courgettes, eggplants, beans, tomatoes, flavoured with roasted garlic and onions, truffle, thyme, laurel, rosemary, not forgetting spices like pepper, cumin, nutmeg ... We will finish with good cheeses and black chocolate desserts.
