Olives & spreads
Inseparable from the aperitif in Provence: the Olive! Green or black, in bulk or in jars, as a spread or as a drizzle of oil in tapenade, it is omnipresent. There are several varieties of olives in Provence, adapted to different terroirs, such as grape varieties for wines. Moreover, some also benefit from the protection of AOP, for example the green Picholines in Nîmes, and the Tanche which is the queen variety of Nyons.
