This cuvée can be considered as a « reserve » in our cellar. In its youth, this wine has a deep dark red colour with purple glints. As it ages, colour changes and acquires tile-red nuances.
On the nose, we discover a delicate complexity, with berries, pepper, vanilla, licorice and leather. In what concerns the mouth, this wine is very concentrated, very rich. During its youth, it needs to be aerated into a carafe for 2 hours to open itself right.
A warm alcohol and well-matured tannins are present but not agressive, and give the necessary structure to this wine that is still round and velvety. The after-taste is very pleasant and lingers longly on the palate.
WINE AND FOOD
We can imagine nice « weddings » with courses that include ingredients like tasty red meats ( lamb, beaf duck, game), vegetables like eggplant, beans, red pepperonni, zuchini, preserved tomatoes, garlic, provence herbs, not forgetting spices, in short, all the ingredients that are used in a real mediterranean way of cooking, not forgetting truffle, good cheeses and black chocolate.
