Evolution of the wine: The color will evolve towards a yellow with straw reflections. The freshness of the fruits will disappear in favor of more jammy aromas, the notes of dried fruits (apricot, almond, hazelnut) as well as spicy notes, thus giving it more of this complexity particular to the white wines of Châteauneuf du Pape.
Food and wine pairings: when young, it is a very nice white wine for aperitif, in the "aperitif tasting" spirit, with a seafood platter, charcuterie with character, or even cheeses, grilled fish, St Jacques in all its forms, or the truffle. When ripe, one can imagine very successful pairings with more simmered dishes, based on tasty white meats (veal and milk-fed lamb, poultry), foie gras and noble fish, all associated with sauces, wild mushrooms , dried fruits…
