Young wine caracteristics :
Bright and clear pale yellow colour due to neutral tank vinification. The mix of grapes in this wine gives it a complex nose of white flowers and fruits, such as elderflower, lime tree flower, citrus fruits, pear... The mouth is very well balanced, between fleshiness and freshness, nice minerality, delicate warmth and good length
The colour will turn to straw yellow, as fresh fruits will move to jam and honey notes, sundried fruits, almonds... Spicier bouquet, a little smoky touch will add more complexity to it.
Wine and food pairing :
On its youth, it's a very pleasant wine to have for an aperitif, with good cold cuts (French from Pays Basque, Corsica... or Italian), goat and sheep cheese, sea-food, grilled fish, scallops, pan-fried foie gras and of course truffle!
More mature, we'll have nice pairings with dishes in sauce (fish or white meat), foie gras again, mushrooms...
