CHARACTERISTICS
In its youth, this wine has a darkish red colour with purple glints. As it ages, the colour changes and acquires tile-red nuances.
The important number of grapes that make this wine gives it a complex nose, in which we find small ripe red fruits, sweet spices like cinnamon, nutmeg, smoky and woody smells. A progressive evolution will change those aromas towards preserved fruits flavours, leather, undergrowth, so the complexity will remain.
In the mouth, roundness is very pleasant. A warm alcohol and tannins are well-present but not agressive and give the necessary structure to this wine. The after-taste is very nice and lingers on the palate.
WINE AND FOOD
We can imagine nice « weddings » with courses that include ingredients like tasty red meats ( lamb, beef duck, game), vegetables like eggplant, beans, sweet pepper, courgette, Italian preserved tomatoes, and garlic, Provence herbs, not forgetting spices.
That’s why this wine is very nice with lamb cooked an oriental way, duck with prunes or figs, beef stew like in Provence…but also good cheeses and desserts marrying black chocolate, spices and orange peels.
