Rock salt or sea salt, flavored or plain, whether we are talking about coarse salt, fine table salt, or fleur de sel, we are talking here about one of the oldest condiments used for centuries, even millennia, in Provence and elsewhere in the world. Flavor enhancer, natural preservative, it was used as currency, and we remember the gabelle, the tax on salt abolished during the Revolution. More common today, salt, in a jar, in a mold or in a salt shaker, sits on all the tables and delicatessen shelves.
