Pistou! In Provence, just by saying “pistou”, you can hear the cicadas, because it is in summer that you savour the famous soup of the same name. The pistou is this ointment traditionally made in Provence in a mortar, which is seasoned at the time of serving, but which also brightens up a dish of pasta, like its cousin the pesto, a tomato salad, a toast with warm goat cheese… We couldn’t not have pistou in our delicatessen selection.
